Carpione is a southern-style marinade from northern Italy. It is similar to nanbanzuke in Japanese cuisine.
It is made with fried small fish, which can be eaten whole, and plenty of vegetables served with a vinegar sauce.
The colorful vegetables are gorgeous and refreshing.

カルピオーネは北イタリアの南部風マリネです。日本料理の南蛮漬けに似ています。
